Chicken Fajita

Dinner last nite was not heavy at all tapi sesedap perut la..Semua org satisfied. Malam tadi macam ada mood Mexicana sikit, so I made Chicken Fajita. Hmmm puas hati walaupun I just have 1 fajita.
First, I marinate chicken strip. tu pun tak lama sangat, lebih kurang 6.30ptg siap prepare utk marinate then lepasa Maghrib dah start masak so about 1 hour je lah.
Resipi utk chicken:
2 ketul chicken breast- tapi ambil bahagian isinya saja dan potong jadi strip
4 ulas bawang putih- di cincang
2sdb oregano
olive oil
chilli flakes (tak de, so saya pakai serbuk paprika)
2sdb gula (kalau ikut resipi dia pakai red wine vinegar; tapi boleh tukar pakai apple cider vinegar or apa2 lah janji halal;- )
1/2 lemon- jadikan juice
serbuk lada
Garam
Daun bawang- dihiris
Lettuce- dihiris- optional
Sedikit mayonis/ sour cream
Jagung- whole kernel- BUKAN jagung krim tau!!

1. Panaskan tortilla.
2. Kemudian letakkan chicken strip, capsicum, daun bawang dan jagung ke atas tortilla.
3. Sudukan sesudu mayonis/ sour krim on top of it, then gulung dan makan.
***Sedap di makan panas2..kalau ada sizzling plate lagi bagus..

Sausages & Cheese Quesadilla

This morning, our breakfast theme is Mexicano. My husband and kids really love this. Yummy but not too heavy yet healthy. Last weekend, for the very first time terjumpa fresh Jalapeno Chillies kat supermarket near my house. Wahh excited gila. Then today for breakfast, we have Quesadillas. Wanna give yourself a try?? Let's look at the recipe.

Ingredient:
Tortilla- this time I'm using wholemeal tortilla- ready made
Cucumber- dice
Sausages- cooked; whether steam or fry; mine fried sausages
Spring onion
1 Jalapeno chilles- cut & roughly dice
Cheddar cheese & Mozarella- shredded
Optional:
Thousand Island & Ketchup

1. Prepare grill pan/ just pan. Then put 1 tortilla at a time, loads the tortilla with cheese, cucumber, jalapeno, sausages, spring onion, thousand island & ketchup and then top again with the shredded cheese on half side of the tortilla.
2. Let the bottom cheese melt so as to let the tortilla to be crunchy.
3. Then fold the other half of tortilla and turn the upside down. Let the cheese melt again then serve warm. Walla!!!
